Prepare the Patty

Season the Beef
In a mixing bowl, combine the ground beef, salt, and black pepper. Mix gently until just combined.

Form the Patties
Divide the beef mixture into two equal portions and form each portion into a round patty, about ¾ inch thick.

Smash the Patties
Heat a large skillet or griddle over medium-high heat. Place the patties on the skillet and use a spatula to smash them down until they are about ½ inch thick. Cook for 3-4 minutes.

Flip the Patties
After 3-4 minutes, flip the patties and cook for an additional 2 minutes. Place a slice of American cheese on each patty during the last minute of cooking to allow it to melt.
Assemble the Burger

Prepare the Bun
While the patties are cooking, slice the sesame seed burger buns in half and lightly toast them if desired.

Add the Patty
Once the patties are cooked and cheese is melted, place one patty on each bun.

Top with Toppings
Add pickles and onions on top of the patties as desired.

Complete the Burger
Place the top half of the bun on each burger and press down gently.
