Prepare the Ingredients
Slice the onion and bell pepper into thin strips. Zest the orange to obtain 1 tablespoon of zest.

Cook the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and bell pepper. Season with salt, black pepper, and red pepper flakes. Sauté for about 10 minutes or until the vegetables are soft and caramelized.

Cook the Blood Sausage
In another skillet, heat the remaining tablespoon of olive oil over medium heat. Add the blood sausage links and cook for about 5-7 minutes on each side until they are golden brown and heated through.

Combine and Serve
Once the blood sausage is cooked, remove from heat and slice into rounds. Serve it on a plate topped with the caramelized onion and bell pepper mixture, and sprinkle with the orange zest.
