Prepare the Anchovies
Clean the fresh anchovies by removing the heads and guts. Rinse them under cold water and pat them dry with a paper towel. Place the anchovies in a dish.

Marinate the Anchovies
In a bowl, mix the white wine vinegar with salt until dissolved. Pour this mixture over the anchovies and let them marinate in the refrigerator for at least 2 hours.

Prepare the Tomato
While the anchovies are marinating, chop the large tomato into small cubes and set aside.

Finish the Anchovies
After 2 hours, drain the anchovies from the vinegar. Arrange them on a serving plate and drizzle with olive oil. Top with the chopped tomato.
