Method
Preparation
- 1
Marinating Seafood
In a large bowl, combine olive oil, minced garlic, lemon juice, paprika, salt, and black pepper. Add the lobster, squid, shrimp, mussels, clams, and crab paste. Toss to coat the seafood well. Cover and let it marinate in the refrigerator for at least 30 minutes.
- 2
Preparing Tostones
Peel the green plantains and cut them into thick slices. Heat vegetable oil in a frying pan over medium heat. Fry the plantain slices until golden, about 3-4 minutes per side. Remove and flatten each slice with a tostonera or a heavy object, then return to the hot oil and fry until crispy. Drain on paper towels and season with salt.
- 3
Preparing Yuca
Peel and cut the yuca into chunks. Boil in salted water until tender, about 20-25 minutes. Drain and serve with a drizzle of olive oil and a sprinkle of salt.
Grilling
- 4
Grilling the Seafood
Preheat the grill to medium-high heat. Remove the marinated seafood from the refrigerator. Grill the lobster for about 10-12 minutes, turning halfway through. Grill the squid, shrimp, mussels, and clams for about 5-7 minutes or until cooked through. Remove from the grill and let rest for a few minutes.
