Method

Cheesecake Filling

  1. 1

    Prepare the Crust

Preheat the oven to 350°F (175°C). Crush the Oreo cookies into fine crumbs using a food processor or by placing them in a zip-top bag and crushing them with a rolling pin. In a bowl, mix the crushed Oreos with melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form a crust. Bake for 10 minutes, then remove from the oven and let cool.

  2. 2

    Make the Cheesecake Filling

In a large mixing bowl, beat the cream cheese until smooth. Gradually add in the sugar and vanilla extract, continuing to beat until creamy. Add the sour cream and mix until well combined. Add the eggs one at a time, mixing on low speed until just combined. Be careful not to overmix.

  3. 3

    Combine and Bake

Fold in 10 crushed Oreo cookies into the cheesecake batter. Pour the mixture over the cooled crust in the springform pan. Bake in the preheated oven for 45-50 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for an hour to cool gradually.

  4. 4

    Chill and Serve

Remove the cheesecake from the oven and let it cool completely at room temperature. Once cooled, refrigerate for at least 4 hours, preferably overnight. Before serving, top with whipped cream and sprinkle with crushed Oreos.
