Mofongo Base

Method

Prepare Mofongo Base

    Fry Plantains

    Peel and slice the green plantains into thick rounds. Heat olive oil in a frying pan over medium heat and fry the plantain slices until golden brown on both sides. Remove and drain on paper towels.

    Mash Plantains

    In a mortar and pestle or a large bowl, mash the fried plantains with minced garlic, chicken broth, and salt until you achieve a smooth and thick consistency.

Prepare Mixto Filling

    Cook Meat

    In a skillet, heat olive oil over medium heat. Add diced onions and bell peppers, sauté until softened. Add ground beef, shredded chicken, and pernil. Season with cumin, black pepper, and cook until meat is thoroughly cooked.

Prepare Shrimp Filling

    Cook Shrimp

    In a separate skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds. Add shrimp, paprika, and salt. Cook until shrimp are pink and cooked through, about 3-4 minutes. Stir in lemon juice.

Assemble Mofonguitos

    Form Mofonguitos

    Take a portion of the mofongo base and shape it into small bowls or cups. Fill half with the Mixto filling and half with the shrimp filling. Repeat until all ingredients are used.

    Serve

    Plate the mofonguitos and serve warm, garnished with fresh herbs if desired.
