    Prepare the Oxtail

    In a large pot, heat olive oil over medium heat. Add the oxtail and sear until browned on all sides. Remove from pot and set aside.

    Sauté Vegetables

    In the same pot, add chopped onion and bell pepper. Sauté until softened, about 5 minutes. Add minced garlic and cook for another minute.

    Cook the Oxtail

    Return the oxtail to the pot. Add chicken broth, salt, and black pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 2-3 hours until the meat is tender.

    Prepare the Plantains

    While the oxtail is cooking, peel and slice the plantains. Fry them in a separate pan in hot oil until golden brown, about 5-7 minutes. Remove and drain on paper towels.

    Mash the Plantains

    In a large bowl, mash the fried plantains with the pork cracklings and some of the garlic from the oxtail mixture until well combined. Add more chicken broth if needed to achieve a smooth consistency.

    Serve the Mofongo

    Form the mashed plantain mixture into balls or mounds and serve topped with the oxtail and broth. Garnish with chopped cilantro.
