    Prepare the Plantains

    Peel the green plantains and cut them into thick slices. In a large pot, bring 2 cups of water to a boil, add the plantain slices, and cook until they are tender, about 20-25 minutes. Drain and set aside.

    While the plantains are cooking, heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Be careful not to burn the garlic.

    Mash the Plantains

    In a large mixing bowl, combine the cooked plantains with the sautéed garlic and oil. Add the salt and pepper. Using a potato masher or fork, mash the mixture until smooth but still chunky.

    Incorporate the Cracklings and Cheese

    Fold in the pork cracklings and queso blanco into the mashed plantains, mixing until well combined.

    Form the Mofongo

    Using your hands or a mold, shape the mofongo into round balls or mounds. If desired, serve immediately or keep warm in a low oven.
