Prepare Mofongo Base

Fry Plantains
Peel and slice the green plantains into thick rounds. Heat olive oil in a large skillet over medium heat and fry the plantains until golden brown and tender, about 5-7 minutes per side. Remove from the skillet and drain on paper towels.

Mash Ingredients
In a large bowl, mash the fried plantains with garlic, pork cracklings, and salt until well combined. You may use a mortar and pestle or a fork.

Stir in lemon juice and chopped parsley. Season with salt and pepper to taste. Remove from heat.
Assemble and Serve
