Prepare the Plantains
Peel the green plantains and cut them into thick slices. In a large pot, bring salted water to a boil and add the plantain slices. Cook for about 20 minutes or until tender. Drain and set aside.

Cook the Longaniza
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the longaniza sausage, breaking it up into smaller pieces as it cooks. Sauté for about 5-7 minutes or until browned. Add minced garlic and cook for another 2 minutes. Remove from heat.

Mash the Plantains
In a large bowl, combine the cooked plantains and the sausage mixture. Use a mortar and pestle or a fork to mash everything together. Gradually add chicken broth to achieve a creamy consistency. Season with salt and black pepper to taste.
