Cooking Directions
- 1
Prepare the Plantains
Peel the green plantains and cut them into thick slices. In a large pot, bring salted water to a boil. Add the plantain slices and cook for about 15 minutes or until they are tender.
- 2
Mash the Plantains
Drain the plantains and transfer them to a large bowl. Add the garlic cloves and salt, then mash the mixture until smooth. Gradually incorporate the chicken broth and continue mashing until you achieve a creamy consistency.
- 3
Add Pork Cracklings
Fold in the pork cracklings into the mashed plantains, mixing well to combine. You can adjust the amount of pork cracklings based on your preference.
- 4
Shape the Mofongo
Using a small bowl or mold, shape the mofongo mixture into a mound. You can also serve it in a small bowl for a more rustic presentation.
- 5
Serve
Drizzle the olive oil over the molded mofongo and serve immediately. Enjoy it with additional pork cracklings or a side of your choice.
