Cook the Pork
In a skillet over medium heat, cook the pork belly or bacon until crispy. Remove from heat and set aside.

Prepare the Plantains
Peel the green plantains and cut them into 1-inch slices. In a large pot, bring water to a boil. Add the plantain slices and cook for about 15-20 minutes, or until tender.

Mash the Plantains
Drain the plantains and transfer them to a large bowl. Add garlic, olive oil, salt, and black pepper. Mash the mixture until smooth but slightly chunky. If needed, add chicken broth to reach desired consistency.

Add Cheese and Pork
Fold in the cheddar cheese and the cooked pork into the mashed plantains until well incorporated.

Shape and Serve
Shape the mofongo into balls or mounds. Serve warm as a side dish or main course.
