Make the Dough
In a large mixing bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Add the egg and water, mixing until the dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.

Roll Out the Dough
On a floured surface, roll out the dough to about 1/8 inch thickness. Cut into circles (about 3-4 inches in diameter).

Fill and Seal Empanadas
Place a tablespoon of filling in the center of each circle. Fold the dough over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for extra security.

Cook the Empanadas
Preheat the oven to 375°F (190°C). Place the empanadas on a baking sheet lined with parchment paper. Brush with egg wash (beaten egg). Bake for 20-25 minutes or until golden brown.
