Cook the Longaniza
In a skillet over medium heat, add the longaniza sausage. Cook until browned and cooked through, about 8-10 minutes, breaking it apart with a spoon as it cooks.

Prepare the Tostones
Peel the green plantains and cut them into 1-inch thick slices. In a large frying pan, heat the vegetable oil over medium-high heat.

Fry the Plantains
Once the oil is hot, add the plantain slices in batches and fry for about 3-4 minutes on each side, until they are golden and cooked through. Remove and drain on paper towels.

Flatten the Tostones
Using a flat surface or tostonera, flatten each fried plantain slice to about 1/2 inch thickness.

Second Fry
Return the flattened plantains to the hot oil and fry again for 2-3 minutes on each side until crispy and golden brown. Drain on paper towels and sprinkle with salt.

Serve
Serve the crispy tostones alongside the cooked longaniza, with fresh lime wedges for squeezing on top.
