Prepare Chicken Tenders
In a bowl, mix together flour, cornstarch, salt, black pepper, paprika, garlic powder, and onion powder. In another bowl, whisk together buttermilk and egg. Dip each chicken tender in the buttermilk mixture, then dredge in the flour mixture until fully coated.

Fry Chicken
Heat vegetable oil in a deep skillet over medium-high heat. Once hot, fry the chicken tenders in batches until golden brown and cooked through, about 5-7 minutes per side. Drain on paper towels.

Prepare Coleslaw
In a bowl, combine coleslaw mix and mayonnaise. Mix well and season with salt and pepper to taste.

Assemble Sandwich
Toast the brioche buns if desired. On the bottom half of each bun, place a crispy chicken tender, a generous scoop of coleslaw, and a few pickles. Top with the other half of the bun.
