    Prepare the Plantains

    Peel the green plantains and cut them into thick slices. Heat a large pot of salted water and bring it to a boil. Add the plantain slices and cook for about 15-20 minutes, or until they are tender.

    Cook the Shrimp

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté until fragrant. Add the shrimp, season with salt and black pepper, and cook until they turn pink (about 3-4 minutes). Stir in the lemon juice and remove from heat.

    Mash the Plantains

    Drain the cooked plantains and return them to the pot. Add the pork cracklings and the remaining 2 tablespoons of olive oil. Mash the mixture together using a potato masher or a fork, gradually adding chicken broth until you reach your desired consistency.

    Combine and Serve

    Gently fold in the cooked shrimp into the mashed plantains. Serve warm, garnished with extra pork cracklings if desired.
