Directions

  1. 1

    Prepare the Base

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

  2. 2

    Add Garlic and Peppers

Stir in the minced garlic and diced red bell pepper. Cook for another 2-3 minutes until fragrant.

  3. 3

    Toast the Rice

Add the long-grain rice to the pot, stirring well to coat with the oil and vegetables. Toast for about 2 minutes.

  4. 4

    Add Broth and Seasonings

Pour in the chicken broth, then add the turmeric, salt, and black pepper. Stir to combine.

  5. 5

    Cook the Rice

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 18-20 minutes, or until the rice is cooked and the liquid is absorbed.

  6. 6

    Add Peas

Once the rice is cooked, gently fluff with a fork and stir in the peas. Cover and let sit for an additional 5 minutes.

  7. 7

    Serve

Serve the Arroz Amarillo warm as a side dish or main course.
