Beef Enchiladas

Beef Enchiladas

    Prepare the Filling

    In a skillet, cook the ground beef over medium heat until browned. Drain excess fat, then add chopped onions, minced garlic, cumin, salt, and pepper. Cook until onions are soft.

    Assemble Enchiladas

    Soften corn tortillas by heating them in a skillet. Fill each tortilla with beef mixture, roll up, and place seam side down in a baking dish. Pour enchilada sauce over the top and sprinkle with cheese.

    Bake

    Cover the dish with foil and bake in a preheated oven at 350°F (175°C) for 20 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.

Tamales

    Prepare the Tamale Dough

    In a bowl, mix masa harina with chicken broth and vegetable oil until a dough forms. Season with salt.

    Assemble Tamales

    Take a soaked corn husk, spread a layer of masa dough, add a spoonful of shredded beef or chicken, and fold the husk. Steam tamales for about 1-1.5 hours.

Spanish Rice

    Cook the Rice

    In a pot, heat oil and sauté chopped onions and garlic until soft. Add rice, tomato sauce, chicken broth, salt, and pepper. Bring to a boil, then reduce heat to low and cover, cooking for about 20 minutes.

Beans

    Prepare the Beans

    In a saucepan, sauté chopped onions and garlic until translucent. Add drained black beans, cumin, and salt. Heat through and mash slightly if desired.
