    In a bowl, whisk together soy sauce, brown sugar, honey, rice vinegar, minced garlic, grated ginger, and sesame oil.

    Place the chicken thighs in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 2 hours.

    After marinating, heat a large pan or skillet over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and cook for about 5-7 minutes on each side, or until cooked through and golden brown. Remove from the pan and set aside.

    In the same pan, add the reserved marinade and bring it to a simmer. In a small bowl, mix cornstarch and water until smooth, then add to the marinade. Stir continuously until the sauce thickens, about 2-3 minutes.
