    Prepare the Pork

    Rub the pork shoulder with salt, black pepper, smoked paprika, garlic powder, and onion powder. Let it sit for at least 30 minutes.

    Sear the Pork

    In a large skillet, heat vegetable oil over medium-high heat. Sear the pork shoulder on all sides until browned (about 4-5 minutes per side).

    Slow Cook the Pork

    Transfer the seared pork to a slow cooker. Pour BBQ sauce over the pork. Cover and cook on low for 8 hours, or until the pork is tender and easily shredded.

    Frizzled Onions

    While the pork is cooking, slice the large onion thinly. In a skillet, add a little oil and fry the onions over medium heat until they are golden brown and crispy. Set aside.

    Shred the Pork

    Once the pork is cooked, remove it from the slow cooker and shred it with two forks. Mix in additional BBQ sauce to taste.

    Assemble

    Serve the pulled pork on a bun or plate. Top with frizzled onions and pickles.
