In a large skillet over medium heat, cook the applewood smoked bacon until crispy. Remove from the skillet and let it drain on paper towels.

Slice the large onion into thin rings. In a bowl, combine the buttermilk with the onion rings and let them soak for at least 30 minutes. In another bowl, mix the flour, salt, and pepper. Heat vegetable oil in a frying pan. Dredge the soaked onion rings in the flour mixture and fry until golden brown. Drain on paper towels.
