    Prepare the Vanilla Beans

    Split the Madagascar vanilla beans lengthwise and scrape the seeds into a small saucepan. Add the split beans as well.

    Heat the Cream and Milk

    Pour in the heavy cream and whole milk into the saucepan with the vanilla beans and seeds. Heat over medium heat until it starts to simmer, stirring occasionally.

    Whisk Egg Yolks and Sugar

    In a separate bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until the mixture is pale and thick.

    Combine Mixtures

    Once the cream mixture is simmering, slowly pour it into the egg yolk mixture, whisking constantly to prevent the eggs from scrambling.

    Cook the Custard

    Return the combined mixture to the saucepan and cook over low heat, stirring continuously, until it thickens enough to coat the back of a spoon.
