In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit for 5 minutes, then fluff with a fork.

Chop mixed peppers, halved cherry tomatoes, and jalapeno (remove seeds for less heat, if desired).
