    Prepare the Potatoes

    Peel and grate the Russet potatoes. Rinse them in cold water to remove excess starch, then drain and pat dry with a towel.

    Cook the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add diced onion, green bell pepper, and red bell pepper. Sauté for about 5-7 minutes until softened.

    Combine and Season

    Add the grated potatoes to the skillet with the sautéed vegetables. Stir in minced garlic, salt, black pepper, and paprika. Mix well to combine all ingredients.

    Fry the Hash Browns

    Spread the potato mixture evenly in the skillet and drizzle with the remaining olive oil. Cook for 10-15 minutes, without stirring, until the bottom is golden brown. Flip the hash browns carefully in sections and cook for an additional 10-15 minutes until the other side is golden.

    Add Cheese and Garnish

    Once cooked, sprinkle shredded cheddar cheese on top and cover the skillet for a few minutes until the cheese melts. Remove from heat and garnish with fresh parsley.
