Make the Pancake Batter
In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar. In another bowl, combine the milk, ube extract, eggs, and melted butter. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Gently fold in the grated keso.

Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for an additional 2 minutes or until golden brown. Repeat with the remaining batter.

Serve with Yuzu Maple Syrup
Serve the pancakes warm, drizzled with yuzu maple syrup. Enjoy!
