Preparation Steps
1. Marinate the Chicken
In a bowl, combine minced lemongrass, minced garlic, fish sauce, and sugar. Add chicken breasts and coat well. Marinate for at least 30 minutes.
2. Prepare the Vegetables
Julienne the carrots and daikon radish. Thinly slice the Fresno peppers. If desired, pickle the peppers in vinegar for 30 minutes.
3. Cook the Chicken
Preheat a grill or skillet over medium heat. Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked. Remove from heat and let rest before slicing.
4. Make the Sambal Mayo
In a small bowl, mix mayonnaise and sambal oelek until well combined.
5. Assemble the Banh Mi
Slice the baguette rolls in half. Spread a generous amount of sambal mayo on both sides. Layer with sliced chicken, carrots, daikon, Fresno peppers, and cilantro.
6. Serve
Close the sandwich and serve immediately, or wrap in parchment paper for later.
