1. Prepare the Short Ribs

Season the short ribs with salt and ground pepper. In a large pot, heat a tablespoon of oil over medium-high heat. Sear the short ribs on all sides until browned. Remove and set aside.

2. Sauté Aromatics

In the same pot, add chopped onion and minced garlic. Sauté until fragrant and onions are translucent.

3. Braise the Short Ribs

Return the short ribs to the pot, add water, and bring to a boil. Reduce heat and simmer for 2-3 hours or until the meat is tender.

4. Make the Peanut Sauce

In a separate bowl, mix peanut butter and coconut milk until smooth. Add fish sauce and stir well.

5. Prepare the Vegetables

While the short ribs are cooking, prepare the bok choy, string beans, and banana blossom. Blanch in boiling water for 2-3 minutes and then set aside.

6. Combine and Serve

Once the short ribs are tender, add the peanut sauce to the pot and stir gently. Serve the short ribs over coconut sticky rice, topped with the blanched vegetables.
