Prepare the Tamarind Broth
In a large pot, bring the water to a boil. Add the tamarind paste and stir until fully dissolved.

Add Vegetables
Add sliced daikon radish, chopped tomatoes, and diced eggplant to the pot. Let it simmer for about 10 minutes until the vegetables are tender.

Cook the Salmon
Gently add the salmon fillets to the pot. Season with fish sauce, salt, and black pepper. Cook for 5-7 minutes until the salmon is cooked through.

Prepare Taro Puree
While the soup is simmering, peel and chop the taro root. Boil in a separate pot until soft, then mash or blend until smooth. Season with salt and set aside.

Fry the Okra
In a separate skillet, heat oil and fry the okra until crispy. Set aside on paper towels to drain excess oil.

Serve
Ladle the sinigang into bowls, adding green onions and red chili peppers for garnish. Serve alongside taro puree and fried okra.
