    Prepare the Pork Sisig

    In a large skillet, heat 2 tablespoons of cooking oil over medium heat. Add the diced pork belly and cook until browned and crispy. Remove excess fat if necessary.

    Sauté Vegetables

    Add the chopped red onion and minced garlic to the skillet. Sauté until the onions are translucent.

    Add Remaining Ingredients

    Stir in the diced carrots, potatoes, raisins, soy sauce, and lemon juice. Season with salt and pepper to taste. Cook until the vegetables are tender.

    Fry the Plantains

    In a separate pan, heat the remaining 2 tablespoons of cooking oil over medium heat. Fry the sliced plantains until golden brown on both sides. Remove and drain on paper towels.

    Assemble the Dish

    Serve the pork sisig over a bed of cooked rice, topped with fried plantains on the side.
