    Prepare the Potatoes

    Wash and cube the Carolina red potatoes into bite-sized pieces. Boil them in salted water for about 10 minutes until just tender. Drain and set aside.

    Sauté the Ingredients

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.

    Cook the Hash

    Add the boiled potatoes to the skillet and cook until they begin to brown, about 5-7 minutes. Stir occasionally to prevent sticking.

    Add the Corned Beef

    Stir in the diced corned beef, chopped scallions, salt, black pepper, and paprika. Cook for another 5-10 minutes until the corned beef is heated through and everything is nicely blended.

    Fry the Eggs (optional)

    If desired, fry the eggs in a separate pan to your liking and serve on top of the hash.

    Serve

    Serve hot, garnished with additional scallions if desired.
