Preparation
Prepare the Rice
Rinse the rice under cold water until the water runs clear. Soak the rice in water for 4-6 hours, then drain.
Cook the Rice
Steam the soaked rice for about 30-40 minutes until it's tender but not mushy. Let it cool to room temperature.
Mix Koji with Rice
Once the rice is cool, mix in the koji evenly. This will help convert the starches into sugars.
Fermentation
Prepare the Fermentation Mixture
In a separate container, mix the cooled rice and koji with 2.5 cups of filtered water.
Add Yeast
Sprinkle the yeast over the top of the mixture and gently stir to combine. Make sure to use sake yeast to get the right flavor.
Ferment the Mixture
Cover the container with a cloth and let it sit in a warm place (about 20-25°C or 68-77°F) for 1-2 weeks, stirring daily.
Final Steps
Strain the Liquid
After fermentation, strain the mixture through a fine mesh sieve or cheesecloth into a clean container to separate the liquid from the solids.
