Marinade Preparation

Prepare the Garlic

Peel and finely chop the garlic cloves.

Mix the Marinade

In a bowl, combine the chopped garlic, soy sauce, brown sugar, apple cider vinegar, black pepper, smoked paprika, and salt. Mix well until the sugar is dissolved.

Marinate the Pork Belly

Prepare the Pork Belly

Place the pork belly in a large resealable plastic bag or a shallow dish.

Add Marinade

Pour the marinade over the pork belly, ensuring it is well coated. Seal the bag or cover the dish.

Marinate

Refrigerate for at least 6 hours, but preferably overnight to allow the flavors to penetrate.

Smoking Process

Prepare the Smoker

Soak the wood chips in water for at least 30 minutes before smoking.

Preheat the Smoker

Preheat your smoker to 225°F (107°C).

Add Pork Belly to Smoker

Remove the pork belly from the marinade and let excess liquid drip off. Place the pork belly directly on the smoker grates.

Add Wood Chips

Add the soaked wood chips to the smoker according to your smoker's instructions.

Smoke the Pork Belly

Smoke the pork belly for about 4 to 5 hours, or until the internal temperature reaches 190°F (88°C) and the meat is tender.

Finishing Touches

Rest the Pork Belly

Once smoked, remove the pork belly from the smoker and let it rest for at least 30 minutes before slicing.
