Lavender Simple Syrup

Make syrup

Combine 1 cup water and 1 cup granulated sugar in a small saucepan over medium heat. Stir until the sugar dissolves and the mixture comes to a gentle simmer.

Add 1 tablespoon dried culinary lavender buds and (optional) 1 teaspoon fresh lemon zest. Reduce heat to low and simmer very gently for 4–5 minutes to infuse. Do not boil vigorously to avoid bitter lavender notes.

Remove from heat and let steep for 10–15 minutes off the heat for a stronger lavender flavor. Taste and adjust steeping time as desired.

Strain the syrup through a fine-mesh sieve or cheesecloth into a clean container, pressing gently on the buds to extract syrup. Discard solids. Cool to room temperature, then refrigerate until cold. Makes about 1 cup; use 1 tablespoon per cocktail.

Elderflower-Lavender Base

In a mixing glass or small pitcher, combine 3 tablespoons elderflower liqueur, 1 tablespoon cooled lavender simple syrup, and 1/2 ounce fresh lime juice. Stir gently to combine. This is the concentrated flavor base for each cocktail.

Taste the base: if you prefer a sweeter, more floral drink, add up to an additional 1/2 tablespoon lavender syrup or 1/4 ounce elderflower liqueur; if you prefer tarter, add a touch more lime.

Spritz Assembly

Fill a large wine glass or stemmed glass with about 1 cup of ice to chill the glass.

Place 2 fresh mint sprigs in your hand and clap them once to release oils, or lightly slap them against the back of your hand. Drop the mint into the glass on top of the ice.

Pour the elderflower-lavender base over the ice and mint.

Add 4 ounces prosecco slowly so you preserve bubbles. Stir gently twice with a bar spoon to incorporate without flattening.

Top with 2 ounces mint soda (or 2 ounces soda water if using plain soda water—if using plain soda, first gently muddle a small handful of mint with 1/2 ounce simple syrup in the bottom of the glass or add an extra 1/2 tablespoon lavender syrup). Pour soda gently over the back of a spoon to maintain fizz.

Garnish with 1 lavender sprig (or edible lavender flowers) and a thin lime wheel or twist placed on the rim or floated on top.

Serve immediately with a straw or stirring stick so the drinker can adjust sweetness or effervescence. Enjoy.
