Transfer the dough to a floured surface. Knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

In a medium bowl, mix the ricotta cheese, Parmesan cheese, chopped fresh spinach, nutmeg, and season with salt and pepper. Combine until well mixed.
