Falafel

Prepare the Falafel Mixture
In a food processor, combine the chickpeas, garlic, onion, parsley, cumin, coriander, baking powder, salt, and black pepper. Blend until a coarse mixture forms.

Shape the Falafel
Form the mixture into small balls or patties, about 1.5 inches in diameter.

Fry the Falafel
Heat oil in a deep skillet over medium-high heat. Fry the falafel balls in batches until golden brown, about 3-4 minutes on each side. Drain on paper towels.

Stuff the Grape Leaves
Lay a grape leaf flat, place a tablespoon of the rice mixture at the base, fold the sides over, and roll tightly. Repeat until all filling is used.

Cook the Dolmades
Place the stuffed grape leaves in a pot, add lemon juice and enough water to cover. Simmer for 30-40 minutes.
Red Pepper Hummus

Blend Ingredients
In a food processor, combine cooked chickpeas, roasted red peppers, tahini, olive oil, lemon juice, garlic, salt, and water. Blend until smooth.

Adjust Consistency
If the hummus is too thick, add additional water, one tablespoon at a time, until desired consistency is reached.
Tzatziki Sauce

Prepare the Cucumber
Grate the cucumber and squeeze out excess water using a clean cloth.

Prepare the Salad Base
On a large plate, place a bed of lettuce.

Arrange the falafel, dolmades, red pepper hummus, tzatziki sauce, and pita bread on top of the lettuce. Serve immediately.
