Preparing the Chicken

Marinate the Chicken

In a bowl, combine olive oil, minced garlic, oregano, paprika, salt, and black pepper. Add the chicken breasts and coat them well. Let marinate for at least 30 minutes.

Cook the Chicken

Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from heat and let rest before slicing.

Making the Rice Pilaf

Sauté Vegetables

In a large saucepan, heat a tablespoon of olive oil over medium heat. Add the chopped onion and diced carrot, sautéing until softened, about 5 minutes.

Toast the Rice

Add the long grain rice to the saucepan, stirring to coat in the oil and vegetables. Cook for an additional 2 minutes to toast the rice lightly.

Add Broth and Cook

Pour in the chicken broth and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and liquid is absorbed.

Finish the Pilaf

Fluff the rice with a fork, then stir in the frozen peas and lemon juice. Allow to sit covered for an additional 5 minutes.

Serving

Assemble the Dish

Slice the grilled chicken and serve it on top of the rice pilaf. Sprinkle the crumbled feta cheese and diced tomatoes over the top.

Serve with Pita

Warm the pita bread in a toaster or oven. Serve alongside the Greek chicken and rice pilaf for a complete meal.
