For the Pork Gyro

Prepare the Pork

In a large bowl, combine olive oil, minced garlic, ground cumin, oregano, paprika, salt, black pepper, and lemon juice to create a marinade.

Marinate the Pork

Cut the pork shoulder into thin strips and add to the marinade. Toss to coat evenly and cover. Refrigerate for at least 2 hours, preferably overnight.

Cook the Pork

Preheat a grill or skillet over medium-high heat. Remove the pork from the marinade and cook for about 5-7 minutes on each side until cooked through and slightly charred.

Rinse the Rice

Rinse the long-grain rice under cold water until the water runs clear.

Cook the Rice

In a saucepan, combine the rinsed rice, water, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the water is absorbed and the rice is tender.

Prepare the Salad Ingredients

In a large bowl, combine diced cucumber, diced tomatoes, and thinly sliced red onion.

Dress the Salad

Drizzle with olive oil, red wine vinegar, and season with salt and black pepper. Toss gently to combine. Top with crumbled feta cheese.
