Method

Spanakopita Preparation

    Prepare the Spinach

    Wash the fresh spinach thoroughly. In a large pot, add the spinach and sauté over medium heat until wilted, about 3-5 minutes. Remove from heat and let cool.

    Cook the Onion and Garlic

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, and cook until the onion is translucent, about 5 minutes. Set aside to cool.

    Mix the Filling

    In a large mixing bowl, combine the cooled spinach, onion, garlic, crumbled feta cheese, beaten egg, dill, salt, and black pepper. Mix until well combined.

    Prepare Phyllo Dough

    Thaw the phyllo dough according to package instructions. Preheat the oven to 375°F (190°C).

    Assemble the Spanakopita

    Layer 5 sheets of phyllo dough in a greased baking dish, brushing each layer with olive oil. Spread the spinach mixture evenly over the phyllo. Cover with another 5 layers of phyllo, again brushing each with olive oil. Trim the edges and score the top with a sharp knife.

    Bake

    Bake in the preheated oven for 30-35 minutes or until golden brown. Remove from oven and let cool for a few minutes before slicing.

Tzatziki Sauce Preparation

    Prepare the Cucumber

    Grate the cucumber and squeeze out excess moisture using a clean cloth. Set aside.

    Mix the Sauce

    In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and dill. Mix well until smooth. Refrigerate until ready to serve.

Greek Salad Preparation

    Prepare Salad Ingredients

    Chop the cucumber, tomatoes, and red onion into bite-sized pieces. In a salad bowl, combine the chopped vegetables.

    Dress the Salad

    Add the feta cheese, olives, olive oil, lemon juice, oregano, salt, and black pepper to the salad. Toss gently to combine.

Pita Bread

    Heat the Pita

    Warm the pita bread in a dry skillet over medium heat for 1-2 minutes on each side, or until heated through.
