Spanakopita Preparation

Prepare the Spinach
Wash the fresh spinach thoroughly. In a large pot, add the spinach and sauté over medium heat until wilted, about 3-5 minutes. Remove from heat and let cool.

Mix the Filling
In a large mixing bowl, combine the cooled spinach, onion, garlic, crumbled feta cheese, beaten egg, dill, salt, and black pepper. Mix until well combined.

Prepare Phyllo Dough
Thaw the phyllo dough according to package instructions. Preheat the oven to 375°F (190°C).

Bake
Bake in the preheated oven for 30-35 minutes or until golden brown. Remove from oven and let cool for a few minutes before slicing.

Prepare the Cucumber
Grate the cucumber and squeeze out excess moisture using a clean cloth. Set aside.

Prepare Salad Ingredients
Chop the cucumber, tomatoes, and red onion into bite-sized pieces. In a salad bowl, combine the chopped vegetables.

Add the feta cheese, olives, olive oil, lemon juice, oregano, salt, and black pepper to the salad. Toss gently to combine.
Pita Bread

Warm the pita bread in a dry skillet over medium heat for 1-2 minutes on each side, or until heated through.
