Method
Meat Preparation
- 1
Marinate the Chicken
In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create the marinade.
- 2
Add Chicken
Cut the boneless chicken thighs into bite-sized pieces and add them to the marinade. Stir well to ensure all pieces are coated.
- 3
Marinating Time
Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight for maximum flavor.
Tzatziki Preparation
- 4
Prepare Cucumber
Grate the cucumber and place it in a clean kitchen towel. Squeeze out the excess moisture to prevent a watery tzatziki.
- 5
Mix Ingredients
In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, chopped dill, and salt.
- 6
Chill the Sauce
Mix well and refrigerate for at least 30 minutes to allow the flavors to meld.
Skewering and Grilling
- 7
Prepare Skewers
If using wooden skewers, soak them in water for 30 minutes to prevent burning. If using metal skewers, ensure they are clean.
- 8
Skewer the Chicken
Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.
- 9
Serving
- 10
Prepare Pita and Garnishes
Warm the pita bread on the grill or in a pan for a few minutes. Prepare diced tomatoes, sliced red onion, and shredded lettuce.
- 11
Assemble the Dish
Serve the grilled chicken skewers with warm pita bread, tzatziki sauce, diced tomatoes, red onion, and lettuce on the side.
