Pork Marinade

    Prepare the Marinade

    In a mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Mix thoroughly.

    Marinate the Pork

    Place the pork tenderloin in the marinade, ensuring it is well coated. Cover and refrigerate for at least 1 hour, preferably overnight for best flavor.

Cooking the Pork

    Cook the Pork

    Preheat the grill or oven to medium-high heat. Remove the pork from the marinade and discard the leftover marinade. Grill or roast the pork tenderloin for about 20-25 minutes, turning occasionally, until the internal temperature reaches 145°F (63°C).

    Rest the Pork

    Once cooked, remove the pork from the heat and let it rest for 5-10 minutes before slicing.

Assembling the Salad

    Prepare the Salad Base

    In a large bowl, combine the chopped romaine lettuce, halved cherry tomatoes, diced cucumber, and sliced red onion. Toss gently to combine.

    Sprinkle the crumbled feta cheese and halved Kalamata olives over the salad.

Preparing the Dressing
