Method
Dough Preparation
- 1
Combine Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, instant yeast, sugar, and salt until well combined.
- 2
Add Wet Ingredients
Create a well in the center of the dry ingredients and add the warm water and olive oil. Stir with a wooden spoon until a shaggy dough forms.
- 3
Knead the Dough
Transfer the dough onto a floured surface and knead for about 8-10 minutes, until the dough is smooth and elastic.
- 4
First Rise
Place the kneaded dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Shaping and Baking
- 5
Preheat the Oven
Preheat your oven to 475°F (245°C) and place a baking stone or an inverted baking sheet inside to heat up.
- 6
Shape the Pitas
Once the dough has risen, punch it down and divide it into 8 equal pieces. Shape each piece into a ball, then roll each ball into a flat circle about 1/4 inch thick.
- 7
Second Rise
Cover the rolled-out pitas with a clean kitchen towel and let them rest for about 10-15 minutes.
- 8
Bake the Pitas
Carefully place the pitas on the preheated baking stone or sheet and bake for about 5-7 minutes, or until they puff up and are lightly golden. Remove and let cool.
