Infusing the Spirit

Combine the Ingredients

In a large glass jar, combine the neutral grain spirit, anise seeds, star anise, and fennel seeds. Seal the jar tightly.

Infuse

Let the mixture sit in a cool, dark place for about 2 weeks. Shake the jar gently every few days to help distribute the flavors.

Sweetening the Ouzo

Prepare the Syrup

In a small saucepan, combine the sugar and water. Heat over medium heat until the sugar is dissolved completely, stirring occasionally.

Combine Syrup with Infused Spirit

Once the infusion period is complete, strain the infused spirit through a fine mesh sieve or cheesecloth into a clean bottle. Slowly add the sugar syrup to the infused spirit, mixing well.

Bottle and Store

Transfer the ouzo to a clean, airtight bottle. Allow it to rest for at least 24 hours before consuming to let the flavors meld together.
