Preparing the Fries

Cut the Potatoes
Wash and peel the potatoes. Cut them into even sticks (about 1/4 inch thick) for even cooking.

Soak the Fries
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

Preheat the Oven
Preheat your oven to 425°F (220°C).

Dry and Season
Drain the soaked potatoes and pat them dry with a kitchen towel. In a large bowl, toss them with olive oil, salt, and black pepper.

Bake the Fries
Spread the fries in a single layer on a baking sheet. Bake in the preheated oven for 30-35 minutes, flipping halfway through, until golden and crispy.
Assembling the Opa! Fries

Prepare the Toppings
While the fries are baking, prepare the toppings. Dice the tomatoes and cucumbers, slice the red onion and pepperoncinis, and crumble the feta cheese.

Combine the Toppings
In a large mixing bowl, combine the diced tomatoes, cucumbers, sliced red onion, sliced pepperoncinis, and crumbled feta cheese.

Add Sauces
Drizzle tzatziki sauce and Greek vinaigrette over the topping mixture and gently toss to combine.

Serve
Once the fries are done baking, remove them from the oven. Top the fries generously with the prepared topping mixture and additional drizzles of tzatziki and vinaigrette as desired.
