Method

Prepare the Eggplant

    Slice and Salt the Eggplant

    Thinly slice the eggplants and sprinkle them with salt. Let them sit for 30 minutes to draw out moisture. Rinse and pat dry.

    Fry the Eggplant

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Fry the eggplant slices until golden brown on both sides. Remove and set aside.

Cook the Meat Sauce

    Sauté Onions and Garlic

    In the same skillet, add the remaining olive oil and sauté chopped onions and minced garlic until soft and translucent.

    Add the Meat

    Add the ground beef or lamb to the skillet. Cook until browned, breaking it up with a spoon.

    Incorporate Tomatoes and Seasonings

    Add chopped tomatoes, cinnamon, and parsley to the meat mixture. Season with salt and pepper to taste. Simmer for 15 minutes.

Make the Béchamel Sauce

    Melt the Butter

    In a saucepan, melt the butter over medium heat.

    Add Flour

    Whisk in the flour and cook for 2 minutes, stirring constantly.

    Add Milk

    Gradually whisk in the milk, stirring continuously until the sauce thickens.

    Finish the Béchamel

    Remove from heat and mix in nutmeg, salt, and pepper. Allow to cool slightly, then whisk in the eggs until smooth.

Assemble and Bake

    Layer the Ingredients

    In a baking dish, layer half of the eggplant, followed by the meat sauce, and then the remaining eggplant. Pour the béchamel sauce over the top.

    Bake the Moussaka

    Preheat the oven to 180°C (350°F) and bake for 45-50 minutes, or until the top is golden brown.

    Cool and Serve

    Allow the moussaka to cool for 10-15 minutes before slicing and serving.
