Preparation

    Measure and Combine Ingredients

    In a small pot or briki, measure 200 ml of cold water and add 2 tablespoons of Greek coffee. If you prefer sweet coffee, also add 1 tablespoon of sugar at this stage.

Cooking

    Heat the Mixture

    Place the pot on low heat and allow the mixture to slowly come to a boil. Stir gently to dissolve the coffee and sugar if added.

    Watch for Foam

    As the coffee heats, watch for the foam to start forming. Do not stir once the mixture begins to foam, as this will help create a rich crema.

    Remove from Heat

    Once the foam rises to the top, remove the pot from the heat to prevent boiling over. Allow it to settle for a few seconds.

    Repeat Heating

    Return the pot to the heat and allow it to foam again. Remove from heat once more. Repeat this process 2-3 times to achieve a strong flavor.

Serving

    Pour and Serve

    Carefully pour the coffee into small cups, allowing the grounds to settle at the bottom of the pot. Serve immediately, either bitter or sweet according to preference.
