    Soak Chickpeas

    Place the dried chickpeas in a bowl and cover with water. Let them soak overnight (about 8 hours) until they have doubled in size.

    Prepare Falafel Mixture

    Drain and rinse the soaked chickpeas. In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarse and holds together when formed into balls.

    Form Falafel Balls

    Add flour to the mixture and pulse a few more times to combine. Using your hands, form small balls (about 1-2 inches in diameter) and place them on a baking sheet.

    Fry Falafel

    Heat vegetable oil in a deep skillet over medium heat. Fry falafel balls in batches until golden brown on all sides, about 3-4 minutes. Remove and drain on paper towels.

Tzatziki Sauce

    Combine Ingredients

    In a bowl, mix together Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, and salt. Stir until well combined.

    Chill Sauce

    Cover the tzatziki sauce and refrigerate for at least 30 minutes to allow the flavors to meld.

Pita Bread

    Prepare Dough

    In a bowl, combine warm water and yeast. Let it sit for about 5 minutes until foamy. In a large bowl, mix flour and salt. Add the yeast mixture and olive oil, and knead until a soft dough forms.

    Let Dough Rise

    Cover the dough with a damp cloth and let it rise in a warm place for about 1 hour, or until doubled in size.

    Shape Pitas

    Preheat the oven to 475°F (245°C). Punch down the risen dough and divide it into 6 equal pieces. Roll each piece into a ball and then flatten into circles about 1/4 inch thick.

    Bake Pitas

    Place the flattened dough on a baking sheet and bake for 5-7 minutes or until puffed and lightly golden. Remove from oven and cover with a towel to keep warm.
