Method
Prepare the Salad Base

Chop the Vegetables
Dice the cucumber, halved cherry tomatoes, thinly slice the red onion, and chop the bell pepper into bite-sized pieces. Combine them in a large bowl.

Add Olives and Feta
Add the Kalamata olives and crumbled feta cheese to the bowl with the chopped vegetables.

Garnish
Finely chop the fresh parsley and sprinkle it over the salad.
Make the Falafel

Prepare Chickpeas
If using dried chickpeas, soak them overnight and cook until tender. If using canned, drain and rinse thoroughly.

Blend Ingredients
In a food processor, combine the chickpeas, garlic cloves, fresh parsley, ground cumin, ground coriander, baking powder, and salt. Blend until a coarse mixture forms.

Shape the Falafel
Using your hands, form the mixture into small balls or patties.

Fry the Falafel
In a large skillet, heat the olive oil over medium heat. Fry the falafel balls until golden brown on all sides, about 3-4 minutes per side. Remove and drain on paper towels.
Prepare the Dressing

Mix the Dressing
In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and black pepper until smooth.
Assemble the Salad

Combine Salad and Dressing
Pour the dressing over the salad base and toss gently to combine.

Top with Falafel
Place the freshly fried falafel on top of the salad.
