Falafel Preparation

    Prepare the Chickpeas

    Drain and rinse the canned chickpeas thoroughly under cold water. Pat them dry with a paper towel and place them into a food processor.

    Blend Ingredients

    Add fresh parsley, garlic cloves, ground cumin, ground coriander, baking powder, salt, black pepper, and all-purpose flour to the food processor. Blend until the mixture is smooth but still has some texture.

    Form Falafel Balls

    Using your hands, form the mixture into small balls or patties. Place them on a tray lined with parchment paper.

    Fry the Falafel

    In a large skillet, heat the vegetable oil over medium heat. Once hot, carefully add the falafel balls and fry until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.

Pita Assembly

    Prepare the Pita

    Cut the pita bread in half to create pockets. If desired, lightly toast the pita halves in a toaster or on a skillet.

    Fill the Pita

    In each pita pocket, place a handful of lettuce, followed by diced tomatoes, and sliced onions.

    Add Sauces

    Drizzle Greek vinaigrette and tzatziki sauce generously inside each pita pocket.

    Insert Falafel

    Carefully place 3-4 falafel balls inside each pita pocket, ensuring they are well-stuffed.
