Prepare the Filling

    Cook the Rice

    In a medium saucepan, bring 2 cups of water to a boil. Add the long-grain rice, reduce the heat to low, cover, and cook for about 15 minutes, or until the rice is tender and the water is absorbed. Fluff with a fork and let it cool.

    Sauté the Onion

    In a pan, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Remove from heat and let it cool.

    Mix the Filling

    In a large bowl, combine the cooked rice, sautéed onion, chopped dill, parsley, lemon juice, salt, and black pepper. Mix well until all ingredients are evenly combined.

Prepare Grape Leaves

    Rinse and Prepare Grape Leaves

    Carefully remove the grape leaves from the jar and rinse them under cold water to remove excess brine. Lay them flat on a clean surface.

Assemble Dolmades

    Stuff the Grape Leaves

    Take one grape leaf and place it shiny side down. Place about 1 tablespoon of the filling at the base of the leaf. Fold the sides over the filling and roll tightly from the base to the tip. Repeat with remaining leaves and filling.

    Arrange in Pot

    Place the stuffed grape leaves seam-side down in a large pot. Arrange them tightly together. Drizzle with the remaining olive oil and add enough water to cover the leaves. Place a plate on top to keep them submerged.

    Cook the Dolmades

    Cover the pot and bring to a boil over medium heat. Once boiling, reduce the heat to low and simmer for about 40-45 minutes, or until the grape leaves are tender.

Prepare Tzatziki Sauce

    Mix the Tzatziki Sauce

    In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, and salt. Mix well and refrigerate until ready to serve.

Serve

    Serve the Dolmades

    Once cooked, remove the dolmades from the pot and let them cool slightly. Serve with tzatziki sauce and warm pita bread.
