Method
Marinating the Chicken

Prepare the Marinade
In a bowl, mix olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper together.

Marinate the Chicken
Cut the chicken breasts into cubes and add them to the marinade. Cover and refrigerate for at least 1 hour, preferably overnight.
Preparing Tzatziki Sauce

Cover the tzatziki sauce and refrigerate until ready to serve.
Cooking Chicken Souvlaki

Prepare Skewers
Soak the wooden skewers in water for 30 minutes to prevent burning. Thread marinated chicken cubes onto the skewers.

Preparing Greek Fries or Rice Pilaf

For Greek Fries
Preheat the oven to 425°F (220°C). Toss potato wedges with olive oil, oregano, salt, and pepper. Arrange on a baking sheet and bake for 30-35 minutes until golden and crispy.

For Rice Pilaf
In a pot, melt butter over medium heat and sauté chopped onion until translucent. Add rice and stir for 1-2 minutes. Pour in chicken broth, bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until rice is cooked.

Serve the grilled chicken skewers with pita bread, tzatziki sauce, and your choice of Greek fries or rice pilaf.
